Recipe from Thomas English Muffins
1 cup cubed/shredded chicken
1/4 cup chopped celery
1/4 cup mayo
2 tablespoons toasted walnuts
2 tablespoons Craisins
2 tablespoons cranberry chutney
1/2 teaspoon curry powder
Spinach leaves
In a medium bowl, combine chicken and mayo. Mix in chutney and curry powder. Then mix in celery, walnuts and Craisins. Place spinach leaves on bread of choice and scoop in chicken salad mixture.
